Preheat oven to 400F
Bring a pan to medium heat. Add 1 tsp oil and ½ small onion, finely diced. Cook for 2 to 3 minutes until softened
Add 1 lb 93/7 lean ground beef and season with salt, pepper, 1 tbsp oregano, 1 tbsp sweet paprika, and 1 tbsp garlic powder. Cook for about 12 mins, mincing the beef down really well with a spatula until browned
Add 2 tbsp tomato paste to the beef, mix well, and let it cook and deepen for another 7-10 mins. Remove from heat and let it cool slightly
Spray an oven-safe dish with oil and spread about 1 tbsp marinara or pasta sauce on the bottom
Fill a bowl with water. Quickly dunk each tortilla to keep them pliable, shake off excess water, and cut in half
Add a spoonful or two of the beef mixture and a bit of shredded cheese to each tortilla half, then fold into sealed pockets
Place pockets in the dish, top with another light tablespoon of sauce and a little more cheese
Bake for 18-20 mins until bubbly on top, or up to 30 mins for more crispiness
Remove from oven, top with fresh basil, and serve
