Crockpot Chicken Gnocchi Soup
  1. Gather Ingredients.

  2. Combine all the ingredients in a crockpot or slow cooker, except for the fresh spinach. Cover the pot and cook on high for 4 to 5 hours or on low for 6 to 8 hours.

  3. Shred the Chicken. Once cooked, shred the chicken right in the crockpot. (If you’re using precooked chicken, you can skip this step.)

  4. Add in Spinach. Stir the spinach into the soup and allow it to cook for the final 5 minutes.

  5. Serve. Pair with crunchy bread, a side salad, or sprinkle with Parmesan cheese.
