Curry Chicken Stuffed Baked Potato
  1. Season the baking potatoes with olive oil, salt and pepper, pierce with a fork, and air fry at 200°C for 30 minutes.

  2. Marinate the chicken thighs in 2 tsp of curry powder.

  3. After the baking potatoes are cooked, place the chicken thighs in the air fryer with the baked potato for another 15 minutes at 200°C.

  4. Prepare the curry sauce by mixing mango chutney, curry powder, turmeric, and light mayo.

  5. Chop the cooked chicken thighs, mix them into the curry sauce, and stuff the baked potato with the chicken curry mixture.

  6. Garnish with chives before serving.
