Peel and cut rinds
Add the watermelon rinds and lemon juice lemon zest and sugar water to cover in a pot.
Boil the mixture.
strain rinds once soft but bouncy
Cover in sugar and citric acid or alternatively cover in lemon juice and then sugar.
Add to oven for a few minutes @350 F
You could also add some black pepper to the yellow one for an extra kick and boost in properties.
