Broccoli Cheddar Soup
  1. Cut 4 cups of broccoli florets into bite-size pieces

  2. Grate 1 cup of carrots and cut into smaller pieces

  3. Dice ½ cup of yellow onion

  4. In a large soup pot over medium-high heat, add 2 tablespoons butter and 3 tablespoons olive oil

  5. Once butter is melted, add broccoli florets, grated carrots, and diced onion

  6. Cook, stirring occasionally, for 7 to 8 minutes until broccoli is soft and browning at edges

  7. Add 4 cloves minced garlic and ¼ cup flour

  8. Cook, stirring constantly, for 2 minutes

  9. Add 1 cup half and half and stir until smooth

  10. Add another 1 cup half and half and stir

  11. Add 4 cups chicken broth and scrape up brown bits from bottom of pot

  12. Add ½ teaspoon salt, ½ teaspoon garlic powder, ½ teaspoon paprika, and ½ teaspoon pepper

  13. Bring to a simmer and cook for 5 minutes

  14. Add 1 ½ cups shredded cheddar cheese and stir until melted and well combined

  15. Serve with extra shredded cheddar and garlic breadsticks
