Cut 4 cups of broccoli florets into bite-size pieces
Grate 1 cup of carrots and cut into smaller pieces
Dice ½ cup of yellow onion
In a large soup pot over medium-high heat, add 2 tablespoons butter and 3 tablespoons olive oil
Once butter is melted, add broccoli florets, grated carrots, and diced onion
Cook, stirring occasionally, for 7 to 8 minutes until broccoli is soft and browning at edges
Add 4 cloves minced garlic and ¼ cup flour
Cook, stirring constantly, for 2 minutes
Add 1 cup half and half and stir until smooth
Add another 1 cup half and half and stir
Add 4 cups chicken broth and scrape up brown bits from bottom of pot
Add ½ teaspoon salt, ½ teaspoon garlic powder, ½ teaspoon paprika, and ½ teaspoon pepper
Bring to a simmer and cook for 5 minutes
Add 1 ½ cups shredded cheddar cheese and stir until melted and well combined
Serve with extra shredded cheddar and garlic breadsticks
