White Bean Pasta Salad With Tomato, Cucumber, Avocado & Pine Nuts
  1. Fill a medium saucepan halfway with hot water (from the tap), cover, and bring to a boil.

  2. Uncover, add salt and pasta, and stir for a few seconds.

  3. Cook until desired firmness, 8-10 minutes.

  4. Drain pasta and rinse under cold water to cool; set aside.

  5. Meanwhile, wash and dry the fresh produce.

  6. Juice lemon into a medium bowl.

  7. Peel and mince shallot; add to the bowl with the lemon juice.

  8. Add mayo and spices to the bowl; whisk to combine the dressing.

  9. Quarter tomatoes and add to the bowl with the dressing.

  10. Trim and small dice cucumber; add to the bowl.

  11. Halve and pit avocado; scoop out with a spoon and medium dice the flesh. Add to the bowl.

  12. Drain and rinse beans, then add to the bowl.

  13. Add cooked pasta and pine nuts to the bowl, then stir to combine the pasta salad.

  14. To serve, divide pasta salad between plates or bowls. Enjoy!
