Mix vinegar, sugar, salt, mustard seeds and dill. Add carrot, cucumber, radish and chilli - leave 20–30 mins
Season chicken breasts
Coat chicken: flour → egg → breadcrumbs and sesame seeds, pressing crumbs in well
Fry chicken 3–4 mins per side until golden and crispy
Drain chicken and finish with salt and squeeze of lemon
Make the mayo by mixing mayonnaise, Dijon mustard, pickle brine, lemon squeeze and pepper until smooth and tangy
Spread a thin layer of mayo on baguette
Add a generous but even layer of chopped liver
Slice schnitzel and layer inside
Top with pickled vegetables
Finish with coriander and chilli
Drizzle with sriracha
