Preheat the oven to 180C/350F
Combine all the ingredients in a small bowl and mix until it forms a smooth paste

Using the back of a knife score the paste in a crisis cross pattern that resembles a pineapple
Using a pastry brush, brush the surface of the toast with the beaten egg yolk
Place the toast on a wire rack and bake for 8-10 minutes, or until the cookie topping is baked and the toast is golden brown
