Protein Sandwich Buns
  1. Preheat oven to 350 degrees.

  2. Add cottage cheese, egg, and honey (if using) to a large bowl and mix until smooth.

  3. In a separate bowl Whisk together oat flour, almond flour, cinnamon, salt and baking powder.

  4. Add the dry ingredients into the wet ingredients and mix until a dough forms.

  5. Dough will be very tacky but not wet. If too wet add oat flour. If too dry add milk.

  6. Lightly oil your hands and divide dough into five equal portions and shape dough into rounds and flatten slightly.

  7. Place on parchment lined pan.

  8. Brush with egg white and top with oats.

  9. Bake for 15-20 minutes until golden on top and hard to the touch.

  10. Slice and serve with your favorite fillings.
