Heat 1 tbsp oil in a pan.
Add cumin seeds and asafetida.
Sauté onion, green chilies, and ginger.
Add turmeric, coriander powder, red chili powder, and salt.
Mix in the mashed potatoes.
Add garam masala, kasoori methi, lemon juice and fresh coriander.
Cook for 2–3 minutes and let the mixture cool slightly.
Make the stuffing.
Roll a wheat flour dough ball into a small circle, place the filling inside, and seal.
Gently roll it into a flat round paratha.
Cook on a hot skillet (tawa) until golden spots appear on both sides, apply ghee.
Serve hot with yogurt, butter, pickle, or chutney.
