Creamy Mushroom And Spinach Lasagna
  1. Heat butter/oil in a large pan.

  2. Add onion & garlic, sauté until fragrant.

  3. Add mushrooms, cook until golden and liquid evaporates (about 8–10 min).

  4. Season with salt, pepper, and thyme/oregano.

  5. Stir in spinach just until wilted. Set aside.

  6. In a saucepan, melt butter.

  7. Stir in flour and whisk for 1–2 min (forms a roux).

  8. Gradually add warm milk, whisking constantly to avoid lumps.

  9. Cook until smooth and thick (about 8–10 min).

  10. Season with salt, pepper, and nutmeg.

  11. Preheat to 180°C (350°F).

  12. Grease a baking dish with butter or oil.

  13. Spread a thin layer of béchamel on the bottom.

  14. Add a layer of lasagna sheets.

  15. Spread mushroom-spinach filling, spoon some béchamel, add ricotta (if using), and sprinkle mozzarella.

  16. Repeat layers until ingredients are used.

  17. Finish with lasagna sheets topped generously with béchamel, mozzarella, and parmesan.

  18. Cover with foil (to prevent burning) and bake for 25 minutes.

  19. Remove foil and bake uncovered for another 15–20 minutes until golden and bubbly.
