Form into whatever pasta shape you like (Ravioli, Lasagna sheets)
To make Fettuccine or Tagliatelle, roll out to thickness of Fettuccine, fold into four, then cut to form Fettuccine (Tagliatelle)
To make Tagliarlini, cut 4 times thinner than the fettuccine
