Wash the potato and slice them in a bowl along with the onion. Heat a large pan over medium flame and, add 1 tablespoon of oil. Add thick slices of potatoes, sliced onion and salt. Saute for a couple of minutes, until the potato turns soft.
Chop the thyme leaves, parsley and rosemary in a bowl. Now, add minced garlic and cook again for a minute. Remove from heat, and stir in the chopped thyme, parsley and rosemary. Remove the potato mixture from pan, and keep aside for a while.
Heat a medium sized pan over low heat. Now, add the remaining 1 tbsp of oil. Add eggs into the pan, and cook for a minute. Carefully turn the eggs over and cook until the whites are set. Serve hot with fried potatoes and enjoy!
