Prepare the Base: Mix Wet Ingredients: In a microwave-safe bowl, melt the peanut butter, honey (or maple syrup), and coconut oil (or butter) together. Heat in 20-second intervals, stirring each time until fully melted and combined. Stir in the vanilla extract and a pinch of salt.
Add the Oats: Add the rolled oats to the wet mixture and stir well until all oats are evenly coated with the wet ingredients.
Press into Pan: Line an 8×8-inch square pan with parchment paper for easy removal. Pour the oat mixture into the pan and press it down firmly using the back of a spoon or your hands to compact the mixture evenly into the pan. This will form the base of the bars.
Prepare the Chocolate Topping: Melt Chocolate: In a microwave-safe bowl, melt the chocolate chips with 2 tbsp of peanut butter (or almond butter) and the coconut oil (if using). Heat in 20-second intervals, stirring in between, until smooth and melted.
Spread the Chocolate: Pour the melted chocolate over the pressed oat base and spread it evenly with a spatula to cover the entire surface.
Set and Chill: Refrigerate: Place the pan in the refrigerator for at least 2 hours, or until the bars have fully set and hardened. If you’re in a rush, you can also freeze them for about 30 minutes.
Cut and Serve: Once set, lift the bars out of the pan using the parchment paper. Cut them into squares or bars, and serve!
