Crock Pot Enchiladas
  1. Add the chicken, onion, garlic, cumin, and salt to the crockpot.

  2. Pour the enchilada sauce over the top.

  3. Cook on low for 6-8 hours or high for 3-4 hours.

  4. Shred the chicken and stir in the sour cream and black beans.

  5. Place the tortilla strips on top and sprinkle with the shredded cheese.

  6. Cook for an additional 30 minutes on high to melt the cheese.
