Indian Pickle Roast Potatoes
  1. Heat oven to 220°C.

  2. Put everything except the coriander into a large roasting tray.

  3. Mix really well so all the potatoes are coated.

  4. Spread everything out in one layer.

  5. Roast for 45 minutes.

  6. Give it a mix halfway through cooking.

  7. Potatoes should be soft inside and slightly crispy outside.

  8. Sprinkle over fresh coriander and serve.
