Fiery fries
  1. Preheat oven to 170°C/350°F.

  2. Bring a large pan of lightly salted water to the boil. Add the potatoes and cook for around 8 minutes, so that they are still quite firm. Remove from heat and drain carefully.

  3. Place a sheet of foil on a baking tray. Drizzle with half of the ghee or butter and sprinkle with the paprika, salt and chilli flakes.

  4. Add the potatoes and turn over so they get a coating of spices and oil. Drizzle over the remaining butter.
