Start by adding the milk, sugar, salt, corn flour and egg yolks into a pot. mix all this together then put the pot over medium-low heat
Keep heating this, whiles constantly stirring, until the whole mixture thickens. once it has thickened, take it off the heat and add in the butter and vanilla
Once the butter has melted and the custard is smooth, it's done. if you see any lumps you can push it through a sieve. if not just add it into a bowl, cover with cling film, making sure the cling film is touching the top of the custard, then leave it in the fridge to cool.
Add the flour, sugar, baking powder and salt into a bowl and mix these together
In a separate bowl or jug, whisk together the milk, yoghurt, oil, vanilla and eggs. add this into the dry ingredients and whisk everything together until just combined. this will be a lumpy batter, that's ok
Here's how i like to cook these - i add some of the batter into the centre of a non stick pan that is on medium-low heat. then i add about a tbsp of water and put a lid on top of the pan. i feel like the steam makes a fluffier pancake but you don't have to do this
These pancakes don't form bubbles on top the way a regular pancake does, you know when they're ready to flip when the top seems dry. once you have flipped them, just cook them for about a minute without the lid or water
Once all of them are cooked, you can start making your pancakes stacks. i added the custard between each layer and then i added some on top too
Sprinkle some granulated or caster sugar on top of the final layer of custard, then use a blowtorch to brûlée it
Let this sit for a minute so the sugar can harden and then enjoy!
