Homemade Greek Flatbread
  1. Combine the yeast and honey in the tepid water and whisk until frothy

  2. Mix in the flour with a wooden spoon, then knead using a standing mixer or by hand for 2-3 minutes

  3. Add the pinch of salt and continue kneading to incorporate

  4. Leave the dough in a bowl covered with a clean tea towel and set aside to rise for half an hour

  5. Divide the dough into 8 even pieces and roll to form balls

  6. Leave the balls to rise for an additional 10 minutes

  7. Flatten each ball with a rolling pin to form flatbread shapes and create dimples in the dough using your fingertips

  8. Heat a drizzle of olive oil in a frying pan over medium heat

  9. Add one flatbread and cook on both sides for 2 minutes, flipping halfway through

  10. Repeat with remaining flatbreads, adding a drizzle of oil to the pan each time

  11. Serve warm with gyros or dips
