Combine the yeast and honey in the tepid water and whisk until frothy
Mix in the flour with a wooden spoon, then knead using a standing mixer or by hand for 2-3 minutes
Add the pinch of salt and continue kneading to incorporate
Leave the dough in a bowl covered with a clean tea towel and set aside to rise for half an hour
Divide the dough into 8 even pieces and roll to form balls
Leave the balls to rise for an additional 10 minutes
Flatten each ball with a rolling pin to form flatbread shapes and create dimples in the dough using your fingertips
Heat a drizzle of olive oil in a frying pan over medium heat
Add one flatbread and cook on both sides for 2 minutes, flipping halfway through
Repeat with remaining flatbreads, adding a drizzle of oil to the pan each time
Serve warm with gyros or dips
