Omani Shuwa
  1. Start by piercing the leg of lamb to let the spices penetrate the meat.

  2. Make the shua spice blend and rub the meat with it. ( let it marinate for at least 4 hours)

  3. Shove whole garlic cloves in the holes in the meat for extra flavor. ( optional)

  4. Wrap the leg of lamb with a baking sheet then tin foil. (wrap it twice with tinfoil and seal it tightly)

  5. Place it in a baking tray and add 4 cups of water. then seal the baking tray with tinfoil.

  6. Place in a preheated oven for 4 hours at 150c.

  7. Remove the tinfoil and water. brush the lamb with the spice blend. then place it back in the oven at 180 for 20 minutes.

  8. Serve it with a rice of choice, a spicy sauce and enjoy.
