Tomato Soup & Parmesan Crisps - Nordstrom Style
  1. Heat olive oil in a large pot over medium heat. Add chopped onions, grated carrots, and dried basil. Sauté for about 10 minutes, until vegetables are soft and fragrant.

  2. Stir in all tomatoes with purée and chicken broth. Drop in 1-2 Parmesan rinds if using.

  3. Bring to a boil, then lower heat and simmer uncovered for 25-30 minutes, stirring occasionally.

  4. Remove Parmesan rinds and blend the soup with an immersion blender until smooth.

  5. Stir in the heavy cream. Season with salt and black pepper to taste. Simmer another 5 minutes.

  6. Preheat oven to 375°F (190°C). Lay baguette slices on a baking sheet.

  7. Spread each slice with a thin layer of salted butter and a little minced garlic.

  8. Sprinkle generously with Parmesan and minced chives and parsley.

  9. Bake for 8-10 minutes, until golden and cheese is melted.

  10. Garnish soup with fresh basil and serve warm with crostini.
