Mini Banana Pancakes with Peanut Butter Sauce

    To make the pancakes

  1. In a small bowl, mash the banana. Add the eggs and nutmeg and mix well with a spoon.

  2. Preheat griddle or nonstick skillet over medium-high heat. Spritz with cooking spray

  3. Working in 1 to 2-tablespoon portions, drop the batter onto the griddle or skillet. Cook until bubbles form on the top of the pancakes, about 2 minutes. Flip the pancakes and cook on the other side for another 2 minutes. Store any unoffered pancakes in the fridge for up to 3 days or in the freezer for up to 6 months.

  4. To make the peanut butter sauce

  5. In a small bowl, whisk together all the ingredients. Store any unoffered sauce in the fridge for up to 3 days.
