Ingredients:
For the Pasta:
12 oz pasta (penne or fettuccine)
For the Sauce:
2 tablespoons olive oil
1 lb chicken breast, sliced
1 onion, chopped
3 cloves garlic, minced
1 yellow bell pepper, diced
1 tablespoon Cajun seasoning
1 cup heavy cream
1 cup grated Parmesan cheese
Salt and pepper, to taste
Chopped green onions or parsley for garnish
Instructions:
Cook the Pasta:
Bring a large pot of salted water to a boil and cook the pasta according to package instructions. Drain and set aside.
Cook the Chicken:
In a large skillet, heat olive oil over medium heat. Add the sliced chicken and season with Cajun seasoning, salt, and pepper. Cook for 6-8 minutes, or until the chicken is fully cooked and golden brown. Remove the chicken from the skillet and set aside.
Sauté the Vegetables:
In the same skillet, add the chopped onion, garlic, and diced yellow bell pepper. Cook for 4-5 minutes until the vegetables are softened and fragrant.
Make the Sauce:
Stir in the heavy cream and bring the mixture to a simmer. Gradually whisk in the grated Parmesan cheese until the sauce becomes thick and creamy. Season with salt and pepper to taste.
Combine the Chicken and Pasta:
Add the cooked chicken and pasta back into the skillet, tossing everything together until well coated in the creamy Cajun sauce.
Garnish and Serve:
Garnish with chopped green onions or parsley and serve hot.
