Place mango flesh in a blender with the lemon juice. Whizz until smooth.
Line a solid dehydrator tray with parchment paper.
Spread the mango puree evenly on the tray.
Place in the dehydrator at 60°C / 140°F for 6 to 8 hours. Check every hour or so until the mango puree feels dry to the finger and looks like leather.
When done you can simply peel it off and cut it into strips to roll-up.
