Preheat oven to 350℉ / 175℃. Peel the apples and cut them into small cubes (2 cups once they're chopped)
In a large bowl add the eggs and whisk together, then add the remaining wet ingredients - coconut oil, honey, milk and vanilla and whisk together
Blend the rolled oats in a blender to create a fine oat flour - giving it a shake half way to ensure the oats are blended well (work in batches if needed)
Add the cinnamon, oat flour and a pinch of salt to the bowl, and lightly whisk together until combined ensuring there is no flour left at the bottom
Add the baking powder and chopped apples and gently fold them through using a rubber spatula
Pour the batter into a circle cake tin lined with parchment paper (8 inches / 20cm in diameter) and spread the top evenly - you can also lightly tap on the table a couple of timesGarnish the top with a sprinkle of rolled oats and the chopped walnuts
Bake for 40-45 minutes depending on your oven strength - checking the middle is cooked through with a toothpick (it should not come out wet)
Allow it to rest for 15 minutes in the cake tin, then at least another 20 minutes on a wire cooling rack before slicing to ensure the middle is set Optionally dust with icing sugar, slice and enjoy your delicious Apple Cake with a cup of coffee or scoop of vanilla ice cream!
