Start off by peeling a large potato.
Grate the potato in a box grater.
Twist and ring the grated potato squeezing out extra liquid with a cheesecloth or clean kitchen towel into a bowl. Discard liquid.
In a large saute pan, add oil.
Place half of the grated potato in the skillet on medium-low.
Sprinkle parmesan cheese over the grated potato and cover with the rest of the potato.
Add salt and pepper.
Cook 5-6 min.
Flip potato over and return to cooking.
Drizzle more oil if needed around the potato.
Increase heat to medium 1-2 min until golden.
Serve with more Parmesan cheese, salt, and pepper, onions and herbs.
Cut into quarters and eat immediately.
