Preheat the oven to 400°F
Place the tomatoes in a 9 × 13-inch baking dish, drizzle with 1 teaspoon extra-virgin olive oil, 1 tbsp. Balsamic vinegar, slices of garlic, sprinkle with fresh oregano and season with 1 teaspoon kosher salt and freshly ground black pepper to taste.
Mix together the herbed feta and chopped spinach in a bowl.
Cut slits into the tops of the chicken breasts about 75 percent of the way down, ½ inch apart, being careful not to cut all the way through.
Stuff the spinach and feta mixture into the slits. Season the chicken with dried oregano, salt and pepper and drizzle with a little olive oil.
Top with shredded mozzarella
Bake until the tomatoes burst and the chicken is cooked through, about 25-35 minutes.
Garnish with fresh basil
