Drain and rinse adzuki beans.
Add adzuki beans, almonds, cacao powder, maple syrup, vanilla extract, and cinnamon to a food processor. Blend until the mixture becomes thick and mostly smooth.
With the food processor running, add the Medjool dates one at a time, allowing each to fully incorporate before adding the next. This prevents the dates from clumping together.
Scoop about 2 tablespoons of the mixture and roll into balls with your hands. This recipe makes approximately 20 balls.
Roll the balls in cacao powder or shredded coconut.
Store in an airtight container in the fridge for up to a week, or the freezer for up to 6 months.
