Preheat oven to 375°F and spray an 11×7-inch baking dish.
Cut chicken into bite-sized pieces, season with salt and pepper, and layer in the dish.
Whisk soups and milk until smooth and pour over chicken.
Sprinkle stuffing mix evenly on top.
Pour chicken broth evenly to moisten stuffing.
Cover with foil and bake 40–45 minutes.
Remove foil and bake another 5 minutes to brown.
Garnish with parsley and serve hot.
