Heat oil and butter; cook shrimp 2–3 mins with Cajun seasoning. Remove.
Add cooked chicken, paprika, and pepper. Stir 2 mins.
Stir in spinach; cook until wilted.
Add garlic, heavy cream, and cream cheese. Stir smooth. Add cheeses and spices.
Mix shrimp and chicken back in until creamy.
Spoon filling on tortilla, fold, and toast both sides until crisp.
Slice and serve hot with creamy cilantro dip or spicy mayo.
