Tuscan Garlic Chicken with Creamy Spinach Pasta

Ingredients 🛒

For the Chicken:

2 large chicken breasts

Salt and pepper, to taste

1 tsp Italian seasoning

1 tbsp olive oil

For the Pasta:

8 oz fettuccine or pasta of choice

2 tbsp butter

3 cloves garlic, minced

1 cup heavy cream

½ cup grated Parmesan cheese

1 cup fresh spinach, chopped

¼ cup sun-dried tomatoes, chopped

Salt and pepper, to taste

Cook Pasta: Prepare pasta according to package instructions until al dente. Drain and set aside.

Cook the Chicken: Season chicken breasts with salt, pepper, and Italian seasoning. In a large skillet, heat olive oil over medium-high heat. Sear chicken until golden brown and cooked through, about 5-6 minutes per side. Remove from skillet and set aside.

Prepare the Cream Sauce: In the same skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

Make it Creamy: Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan cheese until the sauce is smooth and creamy.

Add Spinach & Sun-Dried Tomatoes: Stir in the chopped spinach and sun-dried tomatoes, cooking for 2-3 minutes until spinach is wilted. Season with salt and pepper to taste.

Combine: Add the cooked pasta to the skillet, tossing to coat it in the creamy sauce. Place the chicken on top or slice it and mix into the pasta.

Serve: Garnish with extra Parmesan and fresh basil if desired. Serve warm and enjoy the Tuscan flavors!
