Shepherd's Pie With Cornbread
  1. Preheat oven to 400F.

  2. Dump the ground beef into a large skillet over medium-high heat.

  3. Crumble the ground beef as it cooks.

  4. Once the ground beef is fully browned, add the diced green and red peppers to the skillet.

  5. Stir well and cook for 2-3 minutes.

  6. Add the frozen corn to the skillet and stir well.

  7. Add the salt, pepper, onion powder and garlic powder to the skillet.

  8. Stir well.

  9. Add the water and milk to the skillet and bring to a boil.

  10. Add the mashed potatoes to the skillet and stir well.

  11. Remove the skillet from the heat and add the chopped green onions. Stir well.

  12. Spray a 9 x 13 inch baking dish well with cooking spray.

  13. Pour the ground beef mixture into the baking dish and spread it out evenly.

  14. Pour the Jiffy mix, milk and eggs into a mixing bowl.

  15. Stir the ingredients together until no lumps remain.

  16. Pour the cornbread batter over the ground beef mixture in the baking dish and use a spatula to spread it out evenly.

  17. Place the dish in the oven and bake until the cornbread is nicely browned all across the top. 22 - 25 minutes.

  18. Remove the dish from the oven and let it rest for 10 minutes to firm up.

  19. Slice, serve and enjoy!
