Scandinavian Almond Cake

Cake

    Simple glaze (optional)

  1. Beat well: 1 ¼ cup sugar, 1 egg, 1 ½ tsp. almond extract, ⅔ cup milk

  2. Add: 1 ¼ cup flour, ½ tsp. baking powder

  3. Add: 1 stick melted butter or margarine

  4. Beat mixture well

  5. Spray pan generously with baking spray immediately before pouring batter into pan

  6. Bake at 350° for 40-50 minutes, until edges are golden brown and toothpick inserted into center comes out clean

  7. Rehrucken pan (Nordicware): Bake 45 min, then cover loosely with a sheet of foil (do not seal) . Bake 5 more min. / until cake tester comes out clean.

  8. Cool 10 min., release onto parchment paper and cool.

  9. Sprinkle powdered sugar if desired. (slivered almonds, too) or top with simple glaze once cake is cool.
