Jollof Rice 🍚 🇳🇬
  1. In a blender add the base ingredients and blend until smooth.

  2. Heat up a pot with the oil, add the onions with tomato puree and fry on medium heat for 5 mins.

  3. Pour in the base sauce with the seasoning and mix well. Allow to cook for 10 mins.

  4. While the sauce is cooking, wash the rice (this is very important) until the water runs clear. Add it to the pot the cover with foil and then lid. Place this on the lowest heat and don't touch for 15 mins, stir the rice then place the lid back on and allow to cook. Stir every 15mins until rice is cooked.

  5. Now add some oil to a skillet, press and sear your lions mane until reduced in size, add the seasonings and keep cooking till the moisture has released!

  6. Chop your plantain up and cook in some oil until golden and caramelized. Serve up your jollof, rope with the lions mane chicken and plantain and enjoy!!
