Preheat the oven to 400°F (200°C).
Lay one puff pastry sheet flat on a work surface, spreading the top with the pizza sauce to the edges. Sprinkle with Italian seasoning then top with the shredded mozzarella, Parmesan, and slices of pepperoni. Sprinkle with red pepper flakes.
Place the second puff pastry sheet on top, and gently press down.
Slice into 6 strips (about 1 inch thick) using a pizza cutter. Twist each strip, and place on a parchment-lined baking sheet.
Brush the pizza twists evenly with the beaten egg and sprinkle with a little Italian seasoning.
Bake for 15-20 minutes, until the pizza twists are golden brown. Remove from the oven. Sprinkle with the parsley, and garnish with freshly grated Parmesan.
Serve warm with more pizza sauce for dipping.
