Preheat oven to 350°F.
Prep peppers: Place halved peppers cut-side up in baking dish. Bake 10–15 min to soften slightly.
Cook filling: Heat oil in skillet over medium. Brown meat. Add onion; cook 3–4 min. Add garlic; cook 30 sec. Stir in rice, diced tomatoes, ½ cup tomato sauce, seasoning, salt & pepper. Simmer 2–3 min until combined.
Assemble: (Optional) Spread a few tablespoons tomato sauce in bottom of baking dish. Fill each pepper half with mixture. Top with cheese.
Bake 15–20 min until peppers are tender and cheese is melted.
Rest 5 minutes. Serve.
