Mix all the coating ingredients, then drizzle in the water and toss until small clumps form.
Coat the chicken, pressing the flour onto the surface. Let it rest for 10–15 minutes, then spray generously with cooking oil.
Ninja Crispi: Air Fry for 12 minutes, flip, spray with more oil, and air fry for another 8–10 minutes, or until golden brown and cooked through.
Regular Air Fryer: Air fry at 190°C (375°F) for 12 minutes, flip, spray with more oil, then air fry for another 8–10 minutes, or until golden brown and cooked through.
For the gravy, melt the butter and whisk in the flour. Gradually pour in the chicken stock, then stir in the chicken bouillon, dark soy sauce, and black pepper. Simmer until thickened.
Optional: Finish with a light sprinkle of cayenne pepper for a little extra heat.
