Peel and coarsely grate the carrots
Blend oil, eggs, and grated carrot together
Add sugar and spices to the blended mixture
Pour the mixture over the flours, baking powder, and bicarbonate soda
Mix well
Pour the mixture into a lined 900g loaf tin
Bake at 170°C for around 45 minutes, or until a skewer comes clean
Cool on a wire rack
For the icing: beat cream cheese with softened butter and icing sugar to taste
Add a squeeze of orange juice to the icing
Ice the cake or serve plain
