Saute an onion in some olive oil
Add a can of rinsed chickpeas (or frozen mixed veggies, or cubed butternut squash, or nothing, or something else you like) and 2 cups water (yes 2, not 4, yes I'm sure) season with salt, pepper and a little paprika (or whatever else you want)
Simmer on low flame until water is absorbed
Add 2 heaping tablespoons mayo (yes mayo, yes really, don't skip this) Mix and pour into a 9x13, smooth out the top
Remove skin from chicken, coat very thinly with mayo, arrange on top of rice and sprinkle breadcrumbs over the top (I use panko)
Cover light and bake on 350 for 1.5-2 hours. Only add water toward the end if you see the rice is burning at the edges. Most times I don't add any water and the rice is abnormally delicious, like it's not even fair to other rice recipes that this is so good
