Add the minced garlic and diced onion, sautéing until the onion becomes translucent.
Stir in the grated ginger and chopped chili, cooking for another minute until fragrant.
Add the pork mince to the skillet, breaking it apart with a spatula as it cooks.
Once the pork is browned, sprinkle in the brown sugar and fish sauce, stirring well to combine.
Continue to cook until the sugar has caramelized and the pork is well coated.
Remove from heat and stir in the sliced green onion.
Serve the caramelized pork over jasmine rice, garnished with optional sliced red chili, tomato, and cucumber.
