Pikelets
  1. In a large bowl, whisk together both flours, sugar, salt, and yeast.

  2. Gradually pour in the warm milk and 100ml warm water, whisking until smooth. The batter should be thick but pourable.

  3. Cover and leave somewhere warm for 45 minutes, until doubled in size and bubbly on top.

  4. Mix the bicarbonate of soda with 2 tbsp warm water, stir into the batter, and leave to rest for 2 minutes, it'll start fizzing gently. Whisk until smooth.

  5. Heat a non-stick pan or griddle over medium heat and lightly grease it.

  6. Drop in spoonfuls of batter (about 2 tbsp each). Cook for 2–3 minutes until bubbles appear and the surface looks set, then flip and cook for another 1–2 minutes until golden.

  7. Stack them high, drizzle with golden syrup, and scatter with berries.

  8. Best eaten warm, straight from the pan.
