Tortilla Breakfast Quiche
  1. Preheat oven to 350 degrees

  2. Place each tortilla in a 6” skillet. Crack 2 eggs in each tortilla. Adding 1 tbs of cottage cheese, salt, pepper and thyme. Whisk to combine.

  3. Top with chopped bacon, green onions, sausage and shredded cheese.

  4. Place in preheated oven and bake for 30 minutes or until the eggs are cooked through.

  5. Garnish with fresh chives.

  6. Enjoy!
