Grate zucchini and squeeze out excess moisture using a clean kitchen towel.
In a bowl, mix flour, garlic powder, salt, pepper, and chopped herbs until combined.
Add olive oil and grated zucchini (and Parmesan if using). Mix until a dough forms.
Drop tablespoon-sized mounds onto the baking sheet, flattening slightly.
Bake for 20-25 minutes until golden brown around the edges. Let cool before serving.
