Zucchini Herb Crackers
  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.

  2. Grate zucchini and squeeze out excess moisture using a clean kitchen towel.

  3. In a bowl, mix flour, garlic powder, salt, pepper, and chopped herbs until combined.

  4. Add olive oil and grated zucchini (and Parmesan if using). Mix until a dough forms.

  5. Drop tablespoon-sized mounds onto the baking sheet, flattening slightly.

  6. Bake for 20-25 minutes until golden brown around the edges. Let cool before serving.
