Wedge Salad With Blue Cheese Dressing
  1. Add all dressing ingredients to a mixing bowl along with 1 tsp salt. Whisk together while crushing up some of the cheese to thicken it up. Cover and place in fridge for at least an hour.

  2. Use a mandolin to thinly slice your shallots. Drop them into cold oil and then place over medium high heat and fry until nice and golden brown.

  3. Remove shallots onto a paper towel lined tray.

  4. Place bacon on a baking dish. Place in a cold oven and bake at 400F for 17-20 minutes until crispy.

  5. Remove bacon onto a paper towel lined tray.

  6. Once cooled a bit, chop bacon into smaller pieces.

  7. Once dressing is chilled, taste it and adjust anything to taste.

  8. Cut lettuce into wedges and remove the outer loose leaves.

  9. Place lettuce wedges on serving dish, cover in dressing, and top with shallots, bacon, and chives.

  10. Serve and enjoy.
