Macaroni
Cheese Sauce
Preheat oven to 350.
Add broth, salt, and garlic to pot and bring to boil. Add macaroni and boil 8 minutes. Remove garlic. Drain and put in a mixing bowl twice the size of the cooked macaroni.
Melt butter in large saucepan. Add flour. Cook until it begins to brown, stirring constantly. Add evaporated milk. Stir until smooth. Add cream. Stir until smooth. Add half the milk. Stir until smooth. Add black pepper. Stir.
Turn off heat. Add 75% of the fontina. Stir. Add 75% of the colby jack. Stir. Add 75% of the asiago. Stir.
Whisk eggs with the other half of the milk. Stir into drained macaroni. Add cheese sauce into macaroni. Stir.
Pour half the macaroni mixture into the baking pan. Sprinkle half the remaining cheese on top, then add the rest of the macaroni mixture and sprinkle the rest of the cheese on top.
Bake for 20 minutes at 350, then broil to brown the top.
