Heat sesame oil in a pot and sauté the garlic until fragrant.
Add the ground pork and cook through, then season with doubanjiang, sugar, and soy sauce.
Transfer to a plate and set aside.
In the same pot, add all the soup seasonings and the chopped leek.
Lightly stir-fry, then pour in the water and add the vegetables.
Bring it up to a boil.
Pour in the soy milk.
Just before it comes back to a boil, add the cooked noodles.
Warm it for a moment more, then turn off the heat.
Place the noodles and soup in a bowl, top with the pork, and serve.
