Creamy Salad Dressing

¼ cup extra virgin olive oil

¼ cup vinegar (balsamic, white wine, champagne, or apple cider)

2 tablespoons mayonnaise (traditional or vegan)

2 tablespoons Dijon, brown, or whole grain mustard

1 ½ tablespoons maple syrup or honey

½ teaspoon fine sea salt

¼ teaspoon freshly ground black pepper

Combine all the ingredients in a jar, close tightly with a lid, and shake until creamy and homogenous.
Alternatively, combine the ingredients in a bowl and whisk to incorporate.
Store in the fridge for up to 4 weeks.
