Garlic Naan: Combine the milk, yeast, and ½ teaspoon of the sugar and let rest for 5-7 minutes. Add the yoghurt and oil and whisk to combine. Add the flour, baking powder, salt, and remaining sugar. Knead for 3-5 minutes, cover and let rest for 10-15 minutes. Knead again for 4-5 minutes, shape into a ball, cover and let rest until doubled in size, 1-1½ hours. Make garlic butter and cook naan in a nonstick frying pan.
Pitas: Combine the yeast, 110g of the water, and the sugar. Let rest for 5-7 minutes. Add the flours, remaining water, milk, olive oil, and salt. Knead the dough, let rest until doubled in size, then shape into balls and let rest again. Preheat the oven and bake the pitas until puffed up and lightly browned.
Bagels: Combine the yeast, 220g of warm water, and 1 teaspoon of sugar. Let rest for 5-7 minutes. Add the bread flour, remaining sugar, salt, and remaining water. Knead the dough, let rest until doubled in size, shape into bagels, and let rest. Boil the bagels in water with molasses and bicarb soda, then bake until golden brown.
