Preheat oven to 350 F and grease baking sheets. Stir together flour, baking powder and salt. Set aside. In large mixer bowl, beat sugar and shortening until fluffy, beat in eggs. Stir in dry ingredients, then lemon juice. Mix well, set aside. To make the lemon sugar, process 1 cup granulated sugar and zest of two large lemons in the food processor for a few seconds. Drop dough onto prepared baking sheets, 2" apart. Sprinkle with lemon sugar. Bake 12-15 minutes or until edges are lightly browned.
