Spaghetti Alla Carrettiera
  1. Heat 5 tablespoons of extra virgin olive oil in a pan

  2. Add 1 chopped garlic clove and 2 grated garlic cloves to the oil

  3. Add chopped parsley and chili peppers (and Calabrian chili paste if using) to the pan

  4. Boil 250 grams of spaghetti in salted water for about 6 minutes until halfway cooked

  5. Transfer the partially cooked pasta to the pan with the sauce

  6. Continue cooking the pasta in the pan for another 4 minutes, gradually adding small ladles of starchy pasta water to create a creamy sauce

  7. Once the pasta is fully cooked, remove the pan from heat

  8. Add 100 grams of freshly grated pecorino cheese and stir well

  9. Add a little more pasta water if needed

  10. Serve immediately
